Middle Eastern Lamb kofta with hummus

Middle Eastern Lamb kofta with hummusKofta is a Middle Eastern and Southeast Asian dish made with finely ground meats, spices and herbs. There are hundreds of variations and are also known as kefta, kufta and qofte.

Ingredients

For Cooking

  • 300g lean lamb mince
  • 200g veal mince
  • ½ teaspoon salt flakes
  • ½ teaspoon freshly ground black pepper
  • 3 teaspoons paprika
  • ½ teaspoon dried chilli flakes
  • 1 clove garlic (crushed)
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • ¼ cup chopped parsley

For Serving

  • 1 cup hummus
  • 4 small pitta breads
  • 1 cup tabouleh

Method

Remove the chrome hinged grilling rack and set aside.

Place 28 briquettes (7 rows of 4) into the centre section of the charcoal support rack positioned directly above the central burner.

Connect the gas bottle to the barbecue, turn on the gas supply and turn on the dial until the gas ignites.

After 8 minutes, turn off the gas dial and carefully scatter a further 8 briquettes on top of the ignited 28 briquettes.

Place the top chrome hinged grill rack back into its place on the barbecue and allow the briquettes to burn for a further 8 minutes.

When the 8 minutes has expired the briquettes will turn a white colour and the e-Churrasco will be ready for cooking.

Combine together the lamb, veal mince and salt. Work in the pepper, paprika, chilli flakes, garlic, cumin, coriander and parsley.

Using wet hands, form into balls and mould onto the skewers to form sausage shapes.

When the coals turn white, place the skewers onto the bbq above the hot charcoal, turning often until golden brown on all sides and fully cooked.

Present with some hummus, tabouleh and pitta bread.
